Well, when she finds some grass, it is packed full of nutrition. In high rainfall areas the grass doesn’t have the nutrition density that it would otherwise have here in the desert. To give you an example of the nutritional value of the grass, a rancher would look at the protein level in the forage.

East of I35 her...e in Texas, the protein content would be 1 – 2% in the winter. Here in the West Texas hinterlands, it would range from 8 – 15%. The reason for this is that the rain literally washes the nutrients deep into the soil below the reach of the plant roots. If the Lord is willing, we will be picking up more beef today and delivering this weekend. There are quite a few who need ground beef. If you missed us at the market, and would like for us to bring you some ground beef, call so that we can set up a delivery. 432-638-8706 YT RanchStocking Density and Sustainability Have you ever wondered why you don’t see bucolic scenes of cattle peacefully grazing along the highways here in West Texas? The answer is that vast amounts of real estate are needed to sustain and provide nutrition for a cow. How much acreage is needed for one cow? A cow has to consume 2 – 3 % of her body weight each day for maintenance purposes. For an 800 lb longhorn cow, that is 16 – 24 lbs of forage.

When she is nursing a calf, or w...hen fattening for market, that requirement can be as much as 50% higher. There are large expanses of West Texas rangeland that only have 50 lbs of usable grass per acre, so that means that one acre will only keep that cow nutritionally complete for 2 days. The term graziers use for that cow/calf unit is an “animal unit”. The main focus for any rancher/grazier is to keep their stock provided with the forage and water needed for the animals to thrive. This means that we are constantly moving the cattle, rotating them through pastures to allow the grass the opportunity to grow when rain falls. We stock our rangeland conservatively, mostly allowing 4 to 8 animal units per section (640 acres). This is a sustainable level that can be maintained through all but the most severe drought years. So, the next time you come upon some cows munching on some grass by the side of the road, get a good look at them, because they might not come to that spot of the pasture for a while.

We will be at the market Saturday, and it looks like the weather will be wonderful. Not so wonderful, is that we are almost out of ground beef. We will have a small quantity, and will limit what you can buy. When we get more, we will deliver it to you. YT RanchAGED BEEF VERSUS FRESH BEEF Before the 1960’s, all beef sold in the US was dry aged. The local butcher, farmer, or rancher would hang the sides of beef in a cooler to enhance the flavor and improve tenderness. My ancestors hung their beef in the top of the windmill tower through the winter. They would lower the side of beef each day and cut off the lowest hanging piece for the next meal. The people who ate beef in those days did not know how to marinate steaks, because t...he beef tasted fantastic without any assistance. In the 1970’s, the meat packing industry began its evolution into a fast-paced industrialized behemoth that doesn’t take the time to age beef properly. The focus today is to get the beef from live animals to the meat case in the shortest time possible.

The beef sold in the local grocery store is only a few days, or hours away from harvest. Dry aging is the “gold standard” for quality beef. It concentrates the flavor, reduces cooking shrinkage, and tenderizes the meat. The ground beef that comes from dry aging also has a superior flavor and texture. High end restaurants such as Outback, Logans, Saltgrass, etc., age all of their beef to improve the eating experience. Since dry aged beef is not available, they use a modified process called “wet aging”. They rotate the beef in their specially designed coolers for 28 days to attempt to duplicate the dry aging process. Occasionally, properly aged steaks will have some mold on them. The mold is safe to cook and eat, and is proof that the steaks were aged sufficiently. All of our beef is dry aged. Please don’t marinate it; At least give it a try with some lemon salt, garlic salt, or onion salt and pepper. If you want fresh beef, go to Walmart, or HEB. YT RanchUNCLE EARLY Every family has an uncle who is a character.

Our family had uncle Ed “Early”. Sadly, he died a couple of years ago. Early grew up in Louisiana, and spent his summers on the Ranch at Goldsmith. He loved riding horses and working cattle. To say that he was gullible would be an understatement. He got his nickname “Early” because it was his job to jingle the horses each morning before breakfast so that work could start by sunup. My uncle Arthur came home from... a date with his future wife at midnight one night. He woke Ed up and told him it was time to get the horses up. Ed dutifully went out and started whistling at the horses to entice them to come in. My grandfather “Papa” went out and asked him what he was doing, as it was only midnight. Ed sheepishly told him that Arthur woke him and told him it was time to get the horses up, and he had not bothered to look at the clock. “Early” stuck as his nickname from that day on. One time, Early, Arthur, and Bud (my dad) were riding to the house and came upon a fence that was falling down.

They told Early that he needed to get off his horse and hold the fence up, while they rode down the line to stretch it. They told him that they would come back later and bring a post to hold the fence up. Arthur and Bud continued on to the house and unsaddled their horses and turned them out. My grandmother “Granny” got suspicious after a few hours passed without Early showing up and asked Arthur and Bud where he might be. They fessed up to the trick they played on him, and she made them catch their horses and ride back to get Early. When they got to where they had left him, he was still holding up the fence. One of the treats that they enjoyed, was riding to the General Store at North Cowmen to buy ice cream in a cone. On one of those trips, Early was more engaged in the story he was telling than his ice cream. His horse reached over and helped himself to Early’s treat. Another time, Arthur and Bud were erecting a carport at the house. They convinced Early that they needed some skyhooks to hold the roof on the carport up, and he should ride to North Cowden to get some.
